Puro Cevhice Bar is now open in the former Trattoria Newbury space, Eater Boston first reported.Co-owners George Axitis, Irakli Gogitidze, and Shahrokh Reza were also behind the now-closed trattoria. Along with Kava chef and Colombia native Jesus Preciado, “We chose Latin soul for this location because there’s nothing like this in the neighborhood,” says Gogitidze.The new restaurant, which is currently just open for dinner, has a lengthy list of ceviche, including leche de tigre-marinated red snapper, tuna and avocado with capers, red onion, lime, and soy sauce; and watermelon with salsa criolla. There’s also beef carpaccio, octopus crudo, and more raw dishes; plus shareable small plates like twice-cooked potatoes with green chimichurri; pork, chicken, and chicken heart anticucho (skewers); and sweet corn cachapas with queso fresco and smoked aioli.The bar has a handful of classic cocktails, including a mojito, a Pisco sour, and a tequila mule; bubbly, rosé, and white wines by the glass, and a list of “Flirty and Refreshing” or “Inviting and Charming” bottles. There are also packaged beers, including a 32-ounce Corona.Trattoria Newbury shuttered in December, Gogitidze says. In the ensuing months, the team renovated the small, 33-seat space with whitewashed brick, graffiti-style art, and bright red banquettes. A marble seafood counter and a few other finishing touches are forthcoming, Gogitidze adds. When the weather brightens up, a 20-seat patio will be ready, too.To start, Puro Ceviche Bar is open nightly for dinner, with lunch ramping up in the coming days, Gogitidze says. Weekend brunch will start as the team gets their bearings, too.
